Lion’s Mane Monster Muffins


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup coconut sugar
  • ½ cup mashed banana
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp Gribb Lion’s Mane Powder
  • ½ cup shredded carrots (for a spooky orange color!)
  • ½ cup chocolate chips or blueberries (for “monster eyes”)


Instructions

  1. Preheat oven to 175°C and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, baking powder, salt, and Lion’s Mane Powder.
  3. In a separate bowl, combine coconut sugar, mashed banana, melted coconut oil, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  5. Gently fold in shredded carrots and chocolate chips.
  6. Scoop the batter into the muffin tin, filling each cup ¾ full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool and decorate- try these easy muffin decoration ideas:
    1. Monster Eyes: Add a blueberry on top of each muffin for a fun monster look.

    2. Spider Web Icing: Drizzle thin lines of melted dark chocolate in a web pattern over the muffin tops after cooling. To do this, place the melted chocolate in a piping bag or plastic bag with the tip cut off. Draw a few circles on top of the muffin and use a toothpick to drag lines from the center outward, creating a web effect.

    3. Pumpkin Patch Theme: Add a dollop of green frosting to look like vines or grass, then place a mini orange candy (like a pumpkin-shaped candy or orange M&M) on top to resemble mini pumpkins in a patch.

    4. Witch Hat Toppers: Cut out small black triangles from black edible paper or use chocolate wafers to create tiny “witch hats” to stick into the muffins.

    These fun and easy decorations will make the muffins look Halloween-ready and add an extra touch of magic!
